What Is a Smash Burger? A Plain-English Guide

A smash burger is a burger made by pressing a loosely packed ball of fresh beef onto a very hot flat grill, so the meat sears hard against the metal. That pressure creates a thin patty with a deep brown, crispy crust and a juicy centre, which is why a good smash burger tastes richer than a thicker pub-style patty.

Smashing is not about flattening a burger. It is about maximising the surface of the beef that touches the heat, so more of the patty turns into crust.

Why smashing works

When beef hits a hot surface with pressure behind it, the sugars and proteins in the meat brown rapidly. Food science calls this the Maillard reaction, and it is where most of the flavour in a seared patty comes from. A thick burger only browns on a small area. A smashed patty browns edge to edge, which is why the flavour is more intense even though the patty is thinner.

The trade-off is speed and freshness. A smashed patty cooks in a couple of minutes and dries out if it sits around, so it has to be smashed to order. That is why we do not batch-cook: every burger at So Famous is smashed when your order comes in.
